The climb

Montoresso is not a coffee shop you walk into. It is a basecamp for the restless. Single origin beans from the Colombian mountains, pulled by hand at the bar in Zalka, served to the late ones, the early ones, and the ones mid climb.

Harvesting

carefully
picked beans

High in the Colombian mountains, skilled hands pick only the ripest cherries, one by one. We source from growers who treat quality as a craft, so every batch that reaches Zalka starts at the top. We taste every lot and keep only the ones worth the climb.
Washing
After the harvest, the beans are washed at origin. Spring water carries away the pulp and leaves the seed clean, while the character of the Colombian highlands stays locked inside. This is where the flavor is set, long before the coffee ever reaches our bar in Zalka.
Depulping
At origin, the cherries are stripped to reveal the seed inside. This is where the green bean is born, the raw material every great cup depends on. Done with care in Colombia, so that by the time it reaches Zalka, the potential is already there. We just have to honor it.
Roasting

time to warm
the beans up

In the hands of our master roasters, the green beans undergo a metamorphosis, as they are carefully roasted to perfection. Here, in the crucible of our roastery, the alchemy of heat and time transforms raw beans into a masterpiece of flavor, complexity, and balance.
